Applications are invited from qualified candidates for the position of Food and Beverage Cost Controller in the Food Services Department.

Reporting to the Manager, Food and Beverage Services, the Food and Beverage Cost Controller is primarily responsible for calculating costs of food and beverage items and keeping stocks of the same.

H/She will also be responsible for the short and long term planning of the F&B controlling and pricing and stock management aspects.

Responsibilities

  • Ensure food and beverage items purchasing, receiving, storage and issuing procedures are adhered to;
  • Fully responsible for issuing and controls of all supplies within the food and beverage department;
  • Ensure standard recipes and portion control are in place for the beverage and menu items;
  • Participate or provide a coordinator for monthly market survey to determine cost of supplies;
  • Pre costing of functions tea/snacks, lunches and cocktails to determine whether the hospital is likely to gain or incur losses based on the projected expenses vis a vis income;
  • Advice the Manager on adverse cost changes on food and beverage items that are likely to affect the budget and profitability and suggest a combative measure;
  • Monitor and propose amendment of any control policy which has been flawed to ensure that revenue leakages are minimized to the lowest level possible in order to maintain cost budget;
  • Coordination of all control activities e.g. spot-checks in stores, POS and daily monthly reports are all covered by the controllers as scheduled;
  • Ensure the stock levels both in the main stores and outlets are within the required levels to improve cash flow;
  • Preparing operating equipment stock take schedule and report on monthly basis for review;
  • Ensure any cost and sales discrepancies are fully investigated and corrective action taken as outlined by the policy and recommended by the management;
  • Preparation of monthly\year end stock take schedule and compilation of stock listing.

Requirements

  • Diploma in Food and Beverage Service and Sales or equivalent from a recognized institution;
  • Experience with accounting system, POS system, cost and inventory systems;
  • At least two (2) years’ experience in a similar position with an up-scale (4/5 star) hospitality environment;
  • Knowledge of management of food safety based on Hazard Analysis and Critical Control Points (HACCP) would be an added advantage;
  • Good verbal and written communication skills;
  • Good analytics and reporting skills;
  • Ability to multi-task in a fast-paced environment;
  • Excellent collaboration to promote teamwork;
  • Demonstrable knowledge of cost/stock control;
  • Proficiency in computer software use.
